    Meat - Across the Grain

    This is just a video to show you the difference of the meat when you cut across the grain and along the grain.

    • Across the grain - meat is more tender.
    • Along the grain - meat is more chewy/hard.

    How to do this:

    Find the direction of the grain. The grain is way the muscle fibers are aligned, then slice across the grain rather than parallel with it.
