    Southwest Frittata

    Ingredients

    • 8 eggs
    • 1 cup bell pepper
    • ½ cup white onion diced
    • 1 tbsp jalapeño minced
    • ¼ cup cilantro chopped
    • sea salt to taste

    Instructions

    • PREHEAT oven to 350° and spray a 10 inch pan with nonstick cooking spray.
    • WHISK eggs in a large bowl. Stir in vegetables and cilantro. Season with sea salt. Pour into pan.
    • BAKE for 30-35 minutes. Allow frittata to cool slightly. Gently slide off pan and onto a plate. Slice into 4 pieces.

    Notes

    Yields 4 pieces.
     
    Make it a Maintenance Recipe (choose one):
    • FAT: 1 oz cheese OR ¼ avocado, OR 2 tbsp sour cream
    • PROTEIN: Cooked ground meat or leftover cooked shredded chicken.
