    African Peanut Stew - Low Cal

    Ingredients

    • 4 oz chicken breast cubed
    • 1 stalk celery chopped
    • 1 medium carrots thinly sliced
    • 1/4 cup white onion diced
    • 1/3 cup bell pepper
    • 1 tbsp garlic minced
    • 1 tbsp ginger minced
    • 1 cup canned diced tomatoes with juice
    • 2 tbsp chunky peanut butter
    • 1/2 cup chicken broth
    • 1 tbsp cilantro chopped
    • 1 lime wedge

    Instructions

    • HEAT medium pot or dutch oven over medium heat. Add chicken garlic and ginger. Cook 5 minutes to lightly brown chicken. Add carrots, bell pepper, celery and onion. Cook 7 minutes with lid on, stirring occasionally.
    • ADD tomatoes, chicken broth and peanut butter. Stir and bring to a simmer. Simmer 15 minutes. Serve with lime and cilantro.
