    First, love the program! especially the recipes!

    General feedback on the recipes… WOW! they really are amazing, I enjoy cooking and opted to do the full regular menu. I have 2 children (16 & 13) and a vegan husband. depending on the recipe I add one or 2 servings more - for example the Rosemary butternut squash everyone ate and the proteins varied per person, Spanish cauli rice I double, subbed in veggie broth and that was my husband’s dinner, my 16 year loves the pad thai without the pork and wants it in her lunch every day, my husband made a second (vegan friendly) batch of the deconstructed egg rolls now too! I have found it easy to sub out seafood for myself (I had emailed you about that) too! Bravo on the recipes!

    Thank you for what you have contributed (and expanded) to the HCG community! I have been a follower/admirer for several years. I love this approach, and find it much different than my previous approaches to P3 - I hope this will mark my membership in the P3 to life tribe!


    Pad Thai w/ Miracle Noodles

    • 8 oz skirt steak
    • 1 egg
    • 2 packages miracle noodles drained, rinsed
    • 1 cup carrots shredded
    • 1 cup bean sprouts
    • ½ cup red onion sliced thinly
    • 2 cup snow peas strings removed
    • 1 cup green onions sliced into 2 inch pieces
    • ½ cup cilantro chopped
    • ½ tsp sesame seeds optional
    • 1 lime cut into wedges

    For Sauce:

    • 2 tsp toasted sesame oil
    • 3 tbsp coconut aminos
    • 1 tbsp garlic minced
    • 1 tbsp ginger minced

    Optional topping:

    • Chili garlic sauce Do it! It's good!


    • DRY the shirataki noodles on some paper towels. Thinly slice skirt steak- slice ACROSS the grain for tender meat, not with the grain. Heat a large skillet or work over medium high heat and spray with non-stick cooking spray. Once pan is very hot, add skirt steak. Cook 2-3 minutes stirringly regularly. In a separate small pan, scramble egg. Set aside.
    • ADD red onion and scallions to a skillet with steak. Cook 2 minutes longer. Reduce heat to medium. Begin adding ingredients for sauce. Add shredded carrots and pea pods. Continue to cook another minute.
    • STIR in noodles and bean sprouts toss to cat. Allow noodles to heat 2-3 minutes. Add scrambled egg. Stir once more.
    • DIVIDE into 2 portions. Garnish with cilantro, lime, sesame seeds and chili sauce before serving.


    Make it a maintenance recipe (choose one):
    • FAT: Use an additional egg or add 1 extra tsp toasted sesame oil to sauce
    • CARBS: Replace miracle noodles with 1-2 cups zucchini noodles or sweet potato noodles.
    Yields: 2 servings
