Why do we need a tutorial about zest?! Because I use to do it WRONG! I use to not like zest but one day I decided to Google about it and realize I was doing it incorrectly.
Things to remember about zesting:
- It's easier to zest with a refrigerated lime or lemon but you get less juice with the refrigerated ones. You can still zest the room temperature ones.
- Do not zest all the way to the white pitty part because that is bitter. I'm a frugal person so I always zest until I get all that white stuff and I thought I did a great job. But I was wrong!
- You can use a zester but I find it's harder for me so I use a micro grater which has tinier holes but you still get the same.
