    My husband and I cooked the egg breakfast to last the week and we exchanged the spinach with kale. Really yummy!! We also made the chili and the meatballs today and my husband enjoyed the meatballs for dinner 🙂

    Curried Eggs and Kale - Low Cal

    Ingredients

    • 2 cups kale chopped
    • 2 eggs
    • 1 tbsp curry paste or sub 1.5 tsp curry powder

    Instructions

    • WHISK together eggs and curry paste until smooth. Stir in kale.
    • HEAT a skillet over medium/low heat. Pour in egg/kale mixture and cover. Cook for 3 minutes. Use a wooden spatula to break up mixture and stir. Cover and cook an additional 3 minutes. Serve hot.
